Hash Browns

3 medium potatoes, coarsely grated
½ t salty
½ t pepper
2 T olive oil
Place potato in mixing bowl, cover with boiling water and stir well, leave for 5 mins. Drain potatoes in colander and squeeze out all liquid. Season and mix well. Heat oil in large frying pan and cook flattened spoonfuls of mixture, approx 6-8 mins first side, 3 mins second.
