Bacon, Potato and Onion Rosti
850 g potatoes, halved
60 g butter
6 bacon rashers, chopped
1 red onion, chopped
2 cloves garlic
2 T parsley
1 t oregano
1 t thyme

Cook potato until just tender, drain, refrigerate 1 hour, peel and grate. Heat half butter in fry pan, cook bacon, onion, garlic 2 mins until tender. Add to potato, add herbs and mix well. Add butter to pan, spread mixture over base and press with spatula. Cook 8 mins or until crust forms on base, shake pan occasionally. Slide onto greased plate, add remaining butter to pan, flip rosti back into pan and cook 6 mins until crusty.
