Cauliflower Soup with Croutons
4 slices white bread
cooking spray
500g cauliflower florets
1 medium potato, peeled, chopped
1 onion, peeled, chopped
3 C vegetable stock
2 C skim milk
1 T chives, chopped

Preheat oven to 200°C. Cut bread into cubes and coat lightly with cooking spray. Bake 5 mins or until crisp and golden. Place vegetables and stock in large pan and bring to boil, cover and simmer 10 mins or until potato tender. Blend/food process until smooth. Return to pan and add milk, reheat. Serve scattered with chives and croutons.
