Tuna Croquettes
850g potatoes, peeled, chopped
2 T warm milk
1 T olive oil
1 onion, finely chopped
2 garlic cloves
1 t paprika
425g can tuna, drained
2 T parsley, chopped
2 eggs, beaten
¾ C breadcrumbs
oil for frying

Cook potatoes then mash with milk, transfer to bowl. Heat oil and cook onion 3-4 mins, add garlic and paprika 1 min. Add to bowl, along with tuna and parsley. Mix well. Using ¼ C mixture each, shape into small sausage shapes, then dip in egg then roll in breadcumbs. Cook croquettes in shallow oil.
