Curried Sweet Potato Soup

1T olive oil
1 onion
2 garlic
3t curry powder
1.2kg sweet potato, 2cm cubes
4C chicken stock
1 large green apple, peeled, grated
½C coconut cream
Pepper



Heat oil and saute onion and garlic.  Add curry powder 1 min.  Add potato, stock, apple, bring to boil, reduce heat and simmer partially covered 30 mins or until potato tender.  Blend soup, return to heat and stir in coconut cream and pepper.  Heat to serve but do not boil.
