Hot Potato Salad

6 potatoes
1 finely chopped onion
½ C chopped celery
3 rashers bacon, chopped
2 hard boiled eggs, chopped
½ C mayonnaise
1 chicken stock cube
Dash mustard powder
Salt
1 C grated cheese
Preheat oven 180°C. Lightly cook potatoes (~5 mins) in jackets then cube coarsely. Saute onion, celery, bacon in a little oil. Combine all ingredients (include pan grease from bacon) except cheese and pour into casserole dish. Sprinkle with cheese. Bake 45 mins until cheese browned.
