Carrot & Banana Muffins

1 ½ cups SR flour
½ cup raw sugar
1 lemon rind
1 banana
1 carrot
3 tabs margarine
½ cup milk
Grease patty pans. Oven to 200C. Peel and mash banana. Grate carrot. Grate rind of lemon. Put lemon rind, sugar and margarine into small bowl and beat (electric beater) until light and fluffy. Add banana, carrot, flour and mix by hand. Add milk gradually. Mix until smooth. Spoon into patty pans. Bake 15-20 mins. Makes 12.
