Spicy Date and Pecan Cookies
180g butter
2 t vanilla essence
½ C caster sugar
1 egg yolk
1-1 ½ C SR flour
1 t cinnamon
½ t nutmeg
2/3 C chopped dates
½ C chopped pecans
2/3 C pecan halves

Beat butter, vanilla, essence, sugar, egg in small bowl with electric mixer until light and fluffy. Stir in sifted flour and spices, then add dates and chopped pecans. Refrigerate for 30 mins. Pre-heat oven 200°C. Roll rounded teaspoons of mixture into balls, place on greased trays allowing 4cm between cookies, top with pecan halves. Bake 12 mins or until lightly browned, cool on trays.
