Banana Bread
250 gm plain flour
1 tspn mixed spice
2 tspn baking powder
¼ tspn salt
150 gm unsalted butter, softened
185 gm brown sugar
2 eggs, lightly beaten
2 medium ripe bananas, mashed

Preheat oven to 180°C. Sift flour, mixed spice, baking powder and salt into a large bowl. Cream butter and sugar until soft. Gradually add eggs, beating between each addition. Then add bananas, mix in really well and gradually add flour mixture. Spray a loaf tin and line the base with baking paper. Then spoon mixture into tin (evenly spreading out) and bake on middle shelf of oven for 30-35 mins, until nicely coloured and skewer comes out clean. Cool for 10 mins before turning out onto a rack. Bread can be served warm or cold.
