Banana Pancakes, American Style

2/3rd cup self-raising flour
1 tspn baking powder
1 tspn ground cinnamon
3 tbsp sugar
1 egg
100 ml milk
2 fairly ripe bananas, peeled & sliced
vegetable oil
maple syrup
plain yoghurt
Mix together self-raising flour, baking powder, cinnamon and sugar. Make a well in the centre and mix in egg, together with milk, little by little, to form a batter. Add bananas and mix well. Then heat a thin layer of oil in a large non-stick frypan. Drop in spoonfuls of the batter and cook until golden, turning when bubbles pop. To serve, stack pancakes on individual plates, sprinkle with maple syrup and spoon a dollop of yoghurt on top.
