Banana, Walnut and Choc Chip Cake
¾ cup packed brown sugar
½ cup chopped walnuts
1 tbsp ground cinnamon
240 gm chocolate chips
1½ cups + plain flour
¼ tspn salt
¾ tspn baking powder
¾ tspn bicarb soda
¾ cup white sugar
125 gm + unsalted butter, softened
1 large egg
3 large very ripe bananas, chopped
3 tbsp buttermilk

240 gm chocolate chips

Preheat oven to 180°C. Place brown sugar, walnuts, cinnamon and chocolate chips in a bowl and stir until well blended. Then sift flour, salt, baking powder and bicarb into another bowl. In a third bowl, beat white sugar, butter and egg with a hand mixer until light and fluffy. Add bananas and buttermilk and beat until well mixed. Then add dry ingredients and mix well with a wooden spoon. Lightly butter and flour a springform cake tin. Layer with half of batter, top with chocolate mix and pour in remaining batter. Cook in oven for about 45 mins, until a skewer comes out clean. Allow cake to cool in tin on a cake rack before removing.
