Bombe Alaska

2 egg whites 90 gm caster sugar cooking oil spray 1 Swiss roll, cut into slices vanilla ice cream
Preheat oven to 230°C. Beat egg whites with a hand mixer until soft peaks are formed. Add caster sugar and beat until stiff and shiny. Then transfer into a piping bag. Lay slices of Swiss roll on a lightly oiled baking tray and top with a scoop of ice cream. Pipe a thick layer of meringue over sponge and ice cream and cook in oven for 2-3 mins until lightly browned.
