Blueberry and Filo Pastry Stacks
4 sheets filo pastry

300g blueberries
¼ C caster sugar
2 T orange juice
1 t cornflour
125 light cream cheese
½ C light cream
2 t finely grated orange rind
2 T icing sugar

Preheat oven 200°, lightly grease trays. Spray one filo sheet with oil, layer with another sheet. Halve filo stack lengthways and cut each half into thirds to make total 6 squares. Repeat with other half of filo pastry. Place the 12 squares on trays, spray with oil, bake 5 mins until slightly browned, cool 10 mins. Cook blueberries, sugar, half of juice in small saucepan, stirring until sugar dissolves. Stir in blended cornflour and remaining juice, cook stirring until boils and thickens slightly, remove from heat, cool 10 mins. Beat cheese, cream, rind and half of icing sugar with electric mixer until smooth. Make 4 stacks - place one filo square on each plate, spoon half of cheese mixture and half of blueberry sauce over squares, top with filo square, add second layer and cream and sauce, add last filo square, dust with remaining icing sugar.
