Butternut Pumpkin Soup
3 C chicken stock
1 C water
1 kg pumpkin, peeled and chopped
1 large onion, chopped
2 carrots, chopped
3 sticks celery, chopped
2 cloves garlic
1 t paprika
½ t turmeric
½ t coriander
½ t nutmeg
Salt and pepper

In large saucepan, bring stock and water to boil, add remaining ingredients and bring to boil again. Reduce heat and simmer 20 mins or until soft. Allow to cool then blend, season to taste.
