Thai Green Stir Fry
500g chicken, thin strips
1 small green capsicum, sliced
1 small red capsicum, sliced
3 T oil
2-3 T green curry paste
¼ C coconut milk
½ C basil leaves
1 small green capsicum, sliced
1 small red capsicum, sliced

Heat oil in wok, add curry paste 1 min or until fragrant. Add chicken 3 mins, add capsicum 1 min. Add coconut milk and heat 3 mins, mix in basil and serve.
