Nasi Goreng
3T peanut oil
2 eggs, well beaten
1 onion, finely chopped
1 carrot, finely diced
1 C bean shoots, washed
1 t sambal oelek
1 T tomato sauce
2 T soy sauce
2 C shredded lettuce
3 C cooked rice, chilled

Heat wok. Add 1 T oil and swirl around pan. Add beaten eggs and swirl again to create thin film, cook quickly until egg sets, loosen and tip onto large plate. Roll omelette and slice thinly. Heat 2T oil, fry onion and carrot until soft, add bean shoots, sambal, tomato sauce, soy sauce, half shredded lettuce and toss until well mixed and vegetables tender. Scatter rice on top, breaking up clumps. Toss until rice is hot and well coloured. Add omelette strips, remaining lettuce and toss through. Serve.
