Beef Stroganoff

750g beef steak
Fresh black pepper
1 large onion, sliced
300g mushrooms, sliced
1 tomato, skinned and chopped
1 T tomato paste
2 t paprika
2 t French mustard
¼ C white wine
¼ C chicken stock
1 C light sour cream
1 T fresh chopped parsley

Cook meat quickly in oil in small batches until well browned. Drain. Add onions to pan for 2-3 mins, add mushrooms and tomato until mushrooms tender. Add tomato paste, paprika, mustard, wine, stock and bring to boil. Reduce heat and simmer 5 mins uncovered stirring occasionally. Add meat, sour cream and stir until combined and heated. Sprinkle with parsley to serve with pasta.
