Ayam Tempra
Vegetable oil
2 large onions, sliced
4 chillies, sliced
3 tbsp ketjap manis
1 tbsp honey
1 lime
10 chicken drumsticks
¾ cup chicken stock
3 spring (green) onions, cut in lengths
Heat a little oil in a wok and gently saut? onions and chilli for 20-30 mins, stirring regularly. At the same time, mix together ketjap manis, honey and a good squeeze of lime juice. Place chicken in marinade and set aside, tossing every now and again. Then add chicken to wok in one layer, pour marinade over the top and add stock and a squeeze of lime juice. Cover and simmer for about 30 mins, turning chicken over 1-2 times, basting with cooking juices. Remove chicken to a serving bowl and taste sauce for seasoning. Add spring onions to wok and bring liquid back to the boil. Then pour sauce over chicken and serve with rice.
