Shredded Chicken Salad
2 egg yolks
2 T lemon juice
1 T Dijon mustard
½ C vegetable oil
½ C olive oil
5 C cooked chicken, coarsely chopped
5 celery sticks, sliced thinly
4 hard boiled eggs, quartered (~ 6 mins)
Lettuce leaves, to serve

Blend egg yolks, juice, mustard until smooth. Gradually pour in oils and blend until thickens. Gently toss chicken, celery, egg in large bowl with dressing, serve spooned into lettuce cups.
