Chicken Mozzarella

6 chicken breasts
Flour, egg, dry breadcrumbs
1 can (425g) peeled tomatoes
2 cloves garlic
¼ tspn dried oregano
¼ cup white wine
¼ tspn dried basil
6 slices mozzarella cheese
Butter and/or olive oil
Salt & pepper
Season chicken fillets with salt, pepper, and dust with flour. Dip into beaten egg and then into dry breadcrumbs. Gently fry in a large frying pan in the butter or oil (or a mixture of both) until golden both sides. Mash tomatoes in saucepan. Add garlic, herbs, and wine. Simmer until reduced to a thick sauce. Place the chicken into a shallow ovenproof baking dish in a single layer. Place a spoonful of the tomato sauce over each serve. Top with a slice of cheese. Bake in a moderate oven for about 20-30 mins until the chicken is cooked right through and the cheese is melted and golden.
