Warm Chicken Salad
¾ C vegetable oil
1 heaped t sambal oelek
1 garlic clove
Black pepper
Splash soy sauce
2 t Dijon mustard (optional)
2-3 chicken breasts
8 cooked baby potatoes, halved
2 corn cobs, cooked, cut into thick slices
4 bacon rashers
Large handful lettuce leaves
Punned cherry tomatoes, halved

Whisk together first 5 ingredients, set aside 1/3. Toss chicken in remaining 2/3 and marinade 30 mins, turning occasionally. On bbq cook chicken breasts, potatoes and corn, add bacon towards end. Slice chicken and bacon and toss with lettuce, tomatoes, potatoes, corn. Add 1/3 marinade to taste and serve in large bowl with crusty bread on side.
