Chicken and Vegetable Burritos
1 T vegetable oil
300g chicken fillets, thinly sliced
2 onions, sliced
2 t cumin
2 t coriander
1 t sweet paprika
400g can tomatoes
2 carrots, chopped finely, half-cooked
250g broccoli, chopped, half-cooked
2 T sour cream
4-6 flour tortillas

Cook chicken in oil, drain. Cook onions in pan, add spices, cook until fragrant. Stir in tomatoes and carrot and cook until carrot done. Add chicken, broccoli, cook until broccoli just done. Stir in cream.
