Beef Sausage Pasta
1 C pasta
2 beef sausages
4 t olive oil
1 large red onion, wedges
2/3 C chunky tomato pasta sauce
2 small tomatoes, peeled, seeded, chopped
2 T chopped parsley
2 beef sausages

Cook pasta, reserve ½ C of water. Cook sausages, cut into thick diagonal slices. Heat oil and cook onion wedges 3 mins, until soft. Add tomato sauce and tomato, 3-4 mins or until tomato softened. Add sausage and heat through 1 min. Toss through pasta with sauce, add a little of reserved water if necessary.
