Spicy Sausage & Bean Soup


2 tbsp olive oil
5 good-quality pork sausages or packet Chevups
1 onion, chopped
2 garlic cloves, finely chopped
1 ½ red chillies, seeded and chopped
400g can diced tomatoes
750 ml beef or chicken stock
2x400g cans of borlotti beans (rinsed and drained)
2 tbsp chopped fresh parsley
Salt & black pepper





Heat oil in large sausepan
Add sausages, brown them and remove.
Gently fry onion, garlic and chilli for 3 minutes

Cut sausages into think slices and return to pan adding tomatoes and stock, bring to boil, then reduce the heat, cover and simmer for 20 minutes.

Put half of beans into blender + a couple ladles of soup stock, process till smooth. Stir puree into the soup with remaining beans and simmer for 10 minutes. Add salt and pepper to taste.
