Parmentier's Hash
Olive oil
2 onions, chopped
2 celery stalks, diced
1 carrot, diced
2 bacon rashers, diced
1 garlic clove
1 kg stewing steak, cubed
3 T plain flour
3 C beef stock
800g canned diced tomatoes, drained
Salt and pepper
Splash Worcestershire sauce
Mashed potatoes (6)
Grated tasty cheese

Preheat oven 220°C. Heat oil and saut? vegies and bacon until soft. Add meat and cook until sealed. Add flour, decrease heat and cook 3-4 mins. Add stock, garlic, tomatoes, s & p, sauce, simmer 90 mins until thick and fragrant. Cool a little. Spread layer of mash over base of deep oven dish, top with beef mix and top with rest of mash and grated cheese. Bake for 20-25 mins until golden and bubbling.
