Crumbed Fish
4 x 100g fish fillets
¼ C plain flour
½ C skim milk
1 C breadcrumbs
¼ C chopped fresh herbs
Olive oil spray

Heat oven 180°. Dust fish in flour. Dip into milk. Coat into combined breadcrumbs and herbs, pressing firmly. Refrigerate at least 15 mins. Arrange on baking paper-lined tray. Spray with olive oil spray. Bake 15-20 mins. Serve with wedges and salad.
