Lamb Curry
1 onion, chopped
1 clove garlic
500g lean lamb, cubed
1 T curry powder
2 C water or stock
1 C light evaporated milk
1 T cornflour
1 tomato, chopped
2 T chopped fresh coriander
1 T vinegar
2 t brown sugar
Olive oil spray

Spray large saucepan with olive oil. Saut? onion and garlic. Brown lamb, stir in curry powder. Blend in water. Simmer 25-30 mins or until lamb tender. Blend a little of milk with cornflour in small bowl/jug to form smooth paste. Slowly blend into curry, stirring until boils and thickens. Simmer 3 mins. Add remaining ingredients. Simmer 5 mins. Serve with rice.
