Veal Schnitzel
8 veal escalopes
1 C breadcrumbs
1 C finely grated Parmesan
½ C parsley
2 T finely chopped thyme
Salt and pepper
¼ C milk
2 eggs
1 C plain flour
½ C olive oil
1 C breadcrumbs

Flatten veal with mallet. Combine breadcrumbs, Parmesan, parsley, thyme, salt and pepper. Separately combine milk and eggs. Place flour in bowl. Dip veal in flour then egg then breadcrumbs, until all coated. Heat oil, cook veal 2 mins each side until golden brown.
