Zucchini and Potato Layers

2 lge potatoes, peeled and finely sliced
500g (1) zucchini, trimmed and finely sliced
2 large eggs
1 t salt & pepper
1 tabs finely chopped parsley
Butter
1 cup cheese
½ cup cream
Butter an ovenproof dish, arrange half potato slices, sprinkle with a little cheese, pepper, salt, cover with half zucchini slices - repeat. Beat eggs and cream and pour over top. Sprinkle with parsley and remaining cheese. Bake in moderate oven with foil placed gently over top 30-40 mins. Remove foil, bake for 10 mins longer.
