Creamy Mushroom and Bacon Pasta
250g pasta
1 T olive oil
1 onion, chopped
4 bacon rashers, sliced thinly
(2 T pine nuts)
250g mushrooms, sliced thinly
½ C sour cream
1 egg, lightly beaten
¼ C grated parmesan cheese
¼ C fresh parsley, finely chopped

Cook pasta, drain. Heat oil in pan, cook onion, bacon, pine nuts. Add mushrooms until soft. Stir in remaining ingredients, stir over low heat until heated through.
