Pumpkin, Rice and Leek Hotpot

½ butternut pumpkin, chopped
2 leeks, sliced thickly
2 T butter
3 C vegetable stock
250 g basmati rice
Salt and pepper
Parmesan cheese
Mix pumpkin, leek, butter dollops in bowl, microwave covered for 5 mins. Heat stock. To bowl add stock, rice, seasonings, mix well. Microwave further 8-10 mins until cooked. Serve with Parmesan.
