Cheesey Mince on Toast
vegetable oil
½ onion, diced
½ carrot, diced
½ celery stalk, diced
1 rindless bacon rasher, sliced (optional)
1 garlic clove, crushed
600-700 gm lean minced beef
2 cups tomato puree
½ cup beef stock
freshly ground salt & pepper
2-3 bay leaves
sourdough bread
grated tasty cheese
grated parmesan (optional)

Heat a little oil in a pot and saut? onion, carrot, celery, bacon and garlic to soften. Add beef, stir well and cook until mince changes colour. Then add 1 ½ cups tomato puree, stock, seasoning and bay leaves. Stir and boil rapidly for about 30-40 mins until cooked down, adding more puree if needed. Preheat overhead grill. Grill bread slices on one side and place on a baking tray (untoasted side up). Then mound mince on top, sprinkle with cheese and cook under overhead grill.
