Dead Easy Steak

rock salt
2 thick steaks, well trimmed
freshly ground pepper
vegetable oil
frozen chips
2 heaped tbsp butter, softened
½ lemon
1 heaped tspn chopped parsley
¼-½ garlic clove, crushed
Preheat oven to highest temp. Put a good layer of salt in a baking tray and put in oven until it begins to crackle. Place steak on top and cook for about 10 mins (for medium-rare), turning after 5 mins and putting on a new area of salt and seasoning with pepper. Remove steaks, brush off any excess salt and set aside to rest for a few mins. Fry chips in plenty of hot oil (190°C) and drain well. To make herb butter, mix together butter, a squeeze of lemon juice, a little parsley and garlic. Serve steak with a dollop of lemon and parsley butter on top and chips on the side.
