Lip Smacking Chicken Bits
olive oil spray
8 chicken Marylands, halved
3 red onions, finely sliced
1 cup kecap manis (Indonesian sweet soy)
¾ cup chicken stock
a good knob of ginger, grated
3 garlic cloves, crushed
1 heaped tspn sambel oelek
grated rind of 1 lime
steamed rice
2-3 tbsp chopped coriander
2 limes, cut into wedges

2 limes, cut into wedges
Preheat oven to 180°C. Lightly spray a heavy-bottomed oven tray with oil and top with chicken. Scatter with onions and set aside. To make the sauce, whisk up kecap manis, stock, ginger, garlic, sambel and lime zest. Pour over the chicken and cook in the oven for about 45-60 mins, turning 2-3 times. Mound rice on individual plates and top with chicken and a sprinkling of coriander. Serve with lime wedges on the side.
