Bacon, Leek and Potato Stir-fry
Oil (veg or peanut)
2 eggs, lightly beaten
2 bacon rashers, thinly sliced
2 potatoes, peeled and thinly julienned
1 leek, thinly julienned
2 shallots, sliced
2 T oyster sauce
2 t light soy sauce
1 t sugar

Heat 2 T oil in wok, medium heat. Swirl egg around to form thin omelette, flip over to brown both sides, remove, roll up and thinly slice. Heat little more oil, cook bacon until golden, remove. Add little more oil, cook potato on high heat 5-6 mins until just cooked. Add leek, cook 1 min. Return bacon, add shallots, sauces, sugar 1 min. Serve immediately, garnished with egg strips.
