Potato Cakes with Tuna and Corn
300g potatoes, mashed
200g tuna in brine, drained
1 C sweet corn, drained
1 T parsley, chopped
1 egg, lightly beaten
Salt and pepper
Plain flour
2 T oil

Combine potato, tuna, corn, parsley, egg, salt and pepper and mix well. Shape into 8 patties and dust with flour. Shallow fry in hot oil until golden brown both sides, serve hot.
Make smaller patties for appetisers.
