Coconut Beef Curry on Turmeric Rice

2 T oil
1 large onion, sliced
2 T vindaloo curry paste
1kg chuck steak, cubed
1 C beef stock
200ml coconut cream
1 ¼ C basmati rice
¾ t ground turmeric
Heat oil and cook onion 2-3 mins, add curry paste 1 min, add meat and brown 5 mins. Add stock and bring to boil, reduce heat and simmer covered 1 hour. Uncover and cook 15 mins to reduce sauce. Add coconut cream and return to boil then simmer low heat 15-20 mins until beef tender and sauce reduced.

Rice - rinse and place in saucepan. Add turmeric and 1 ¾ C water and bring to boil. Reduce heat to very low and cook covered 10 mins.
