Bombay-Spiced Chicken Skewers
1/3 C peanut oil
4 cloves garlic
2 T sweet paprika
1 T ground cumin
1 T ground turmeric
1 T ground coriander
2 kg breast fillets, 3cm pieces

Soak 24 skewers in cold water for 1 hour. Heat oil in saucepan, cook garlic and spices, stirring, until fragrant. Thread chicken onto skewers and place in shallow dish/oven tray. Pour over spiced oil, turn to coat well. Cook over grill plate/bbq. Serve over rice.
