Chicken and Pumpkin Stir-Fry
2 T peanut oil
2 onions, sliced
2 small red chillies, seeded, chopped
½ t cracked black pepper
4 chicken breast fillets, sliced
600g pumpkin, peeled, thinly sliced
3 T fish sauce
¼ C basil leaves

Heat oil in wok, add onions, chillies, pepper 1 min. Add chicken 3 mins until browned. Add pumpkin, fish sauce, cover and cook 3-4 mins, stirring occasionally, until pumpkin just soft. Stir through basil and serve on rice or noodles.
