Caramel Chicken
8 chicken thighs, chopped in half
1 T oil
1 red onion, sliced
3 cloves garlic
Black pepper
¼ C dark soy sauce
½ C brown sugar
¼ C fish sauce

Toss chicken in bowl with oil. Heat large pan high heat, add chicken in batches 3 mins each, remove. Reduce heat to medium, (may need more oil) add onion, garlic 5 mins. Return chicken, add black pepper, soy sauce, stir to combine. Cover pan, reduce heat to low and cook 10 mins, stirring occasionally. Increase heat to high, add sugar, stir to combine. Cook uncovered 3-4 mins or until sauce rich and syrupy. Add fish sauce and stir to combine.
