Superb Salmon Croquettes
Mum

2 T butter
½ C finely chopped celery
4 T plain flour (125g)
1 C dry white breadcrumbs
1 C milk
2 eggs, lightly beaten
1 small onion, chopped
Salt & pepper
445g can salmon, drained
Oil
Melt butter and saut? onion. Add flour and stir over heat 3 mins. Add milk, bring to boil, stirring constantly. Add salt & pepper, salmon and celery. Place in shallow dish and chill. Divide mixture into 12 (or 18 small) portions, roll in breadcrumbs, lightly beaten eggs and then breadcrumbs again. Heat oil and fry croquettes for 3-04 mins until golden brown.

Needs to chill overnight.
