Pot of Italian Lamb Chops
1 C breadcrumbs
½ C grated parmesan
2 garlic cloves
½ C chopped parsley
Olive oil
10 baby potatoes, sliced
1 large onion, finely sliced
12 lamb chops
White wine + water (equal)
2 C canned tomatoes, drained, chopped
Salt and pepper

Preheat oven to 190°C. Mix together breadcrumbs, parmesan, garlic, parsley. Grease casserole dish. Layer: ½ potatoes and onions, wine and water (to just cover), ½ tomatoes, 1/3 crumbs, 6 chops, repeat all, then crumbs. Sprinkle with olive oil and bake 1-1 ½ hours, until chops tender.
