Banana Cake
1 ½ C SR flour
125g softened butter
1 ½ C mashed bananas (approx 4)
¾ C brown sugar
2 eggs, beaten
2 T milk
1 t vanilla essence
½ t bicarb soda

Heat oven 180°. Place all ingredients into large bowl. Beat with electric mixer on low speed until combined. Increase speed to medium and beat until smooth and pale. Pour into greased 20cm round or square tin. Bake 45-50 mins. Cool in tin for 5 mins then turn onto rack.
Suits lemon icing.
