Quick Patty Cakes

1 ½ cups SR flour
2 eggs
½ cups caster sugar
¼ cup milk
Pinch salt
½ tspn vanilla essence
90g softened butter

Sift dry ingredients into small basin of electric mixer, add remaining ingredients. Beat on medium speed 3 mins or beat with wooden spoon until smooth. Drop heated teaspoonfuls of mixture into deep, greased patty tins, bake in moderate oven 12-15 mins. Makes about 24.
