Coconut, Banana and Oat Muffins
1 C plain flour
2 ½ t baking powder
2 C rolled oats
¾ C shredded coconut
½ C firmly packed brown sugar
2 eggs, beaten
1 C buttermilk
½ C vegetable oil
1 t vanilla essence
1 medium banana, mashed

Preheat oven to 190°C. Spray or line 12-cup muffin tray. Sift flour and baking powder into large bowl. Mix in rolled oats, coconut, brown sugar. In another bowl mix eggs, buttermilk, vegetable oil, vanilla, banana. Add this mixture to first, stirring until just combined. Divide into muffin cups and bake 25 mins.
