Blueberry Bran Muffins

30 g butter
¾ C honey
½ C milk
½ C vegetable oil
3 eggs
3 C plain flor
2 t baking powder
½ C bran cereal
1 ½ t ground cinnamon
1 apple, grated
2 bananas, mashed
250 g blueberries
6 strawberries, halved (optional)
Preheat oven to 180°C, line 12 muffin cups. Place butter and honey in small saucepan and cook 5 mins or until slightly caramelised. Whisk milk, oil and eggs in bowl. Combine in another bowl the flour, baking powder, bran, cinnamon, stir through apple, bananas, blueberries. Add milk mixture and stir until just moistened, fold in butter mixture until just combined. Spoon batter into cups, top with strawberry half, bake 25-30 mins, cool slightly then remove from cups and serve.
