Apple Blueberry Muffins

2 eggs
2 T honey
1 T caster sugar + extra
3 T vegetable oil
1 green apple
185 ml milk
150 g blueberries
2 C plain flour
1 t cinnamon
2 t baking powder

Preheat oven to 180°C, line 6 large muffin cups. Whisk together until just combined the eggs, honey, caster sugar, vegetable oil. Cut apple in half and grate half, slice thinly other half, add grated apple to bowl, also add milk and blueberries. Sift flour, cinnamon, baking powder into another bowl, lightly fold into wet mixture. Spoon into cases, top with apple slices and extra caster sugar, bake 30 mins or until golden.
