Quick Broccoli and Bacon Soup

4 rashers bacon, chopped
1 onion, chopped
1 t minced garlic
6 C chicken or beef stock
500g frozen broccoli
1 ½ C frozen peas
1 large carrot, grated
1 sweet potato, grated
¼ C chopped parsley
Spray large saucepan with oil. Saute bacon, onion and garlic. Add stock, broccoli, peas, carrots, carrot and sweet potato. Bring to boil. Reduce heat and simmer 10 mins or until tender. Process/blend until smooth. Stir through parsley. Serve with garlic bread.
