Low Fat Rice Custard

4 T rice
4 C skim milk
3 eggs, lightly beaten
¼ C sugar
20 g reduced-fat butter
Cinnamon
Preheat oven to 140°C. Coat 1 ½ L dish with cooking spray. Place ingredients (not cinnamon) in dish, gently stir to combine. Sprinkle with cinnamon. Bake 1 - 1 ½ hours or until rice soft and custard set.
