King of Puddings
4 eggs
565 ml milk
115 g fine breadcrumbs
225 g sugar (preferably vanilla sugar)
4 level T jam

Preheat oven to 150°C. Separate 3 of eggs. Put yolks in bowl with whole egg and beat together, add milk, breadcrumbs, 85g of sugar. Spread jam evenly on bottom of pudding dish. Pour over egg mixture, bake 1 hour or until set. Whisk remaining 3 egg whites until stiff, slowly add remaining sugar. Pile on top of pudding, bake further 15-20 mins until meringue set and slightly browned.
